Ingredients :
- 1 package baby spinach
- 1/2 orange bell pepper
- 1/2 yellow bell pepper
- 1/2 pint cherry tomatoes
- 4-6 button mushrooms (optional)
- 2-3 green onions (optional)
- 1-2 grilled chicken breasts (or sauteed tofu)
- ranch dressing
Method :
- While chicken is cooking (grilled or pan fried with olive or coconut oil and a pinch of himalayan salt), rinse all veggies and dry spinach.
- Dice onions, mushrooms, toms and peppers.
- When chicken is fully cooked, drain any excess olive oil, and slice to bite sized pieces.
- In a large glass bowl, add spinach along with veg and chicken. Drizzle ranch dressing on. Season with ground black pepper if you like, and enjoy!
