Ingredients :
- 2 cups flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 tsp sugar
- 2 eggs, separated
- 2 cups buttermilk
- 4 TB melted butter
Method :
- Whisk egg whites and buttermilk
- Whisk yolks and melted butter
- Combine 2 egg mixtures and whisk until thoroughly combined
- Combine dry ingredients
- Pour wet mixture over dry mixture and mix just enough to bring together. Do not work all lumps out. Add fruit if desired.
- Pour 1/4 cup onto griddle. When bubbles set around edges, flip gently.
