Ingredients :
- 1 lb broccoli
- 1/4 tsp salt
- 1 cup grated parmesan cheese
- 2 large eggs
- 2 tbsp baking powder
- 2 cup sharp cheddar cheese, shredded
- 1/4 cup parsley
Method :
- Preheat oven 425° Fahrenheit
- Mix the parsley,parmesan cheese, baking powder, and eggs. When mixed add about a tablespoonful each to a muffin pan.
- Chop the broccoli up fine salt the broccoli. Add 1 tablespoonful on top of the parmesan cheese batter.
- Top with cheddar cheese.
- Bake 30 minutes or till done.
