Ingredients :
- 1 1/2 cups unbleached flour
- 1 1/2 cups rolled oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter
- 1 1/4 cup brown sugar
- 1/4 cup canola oil
- 1 teaspoon vanilla extract
- 1-2 eggs
Method :
- Preheat oven to 375 degrees fahrenheit! Gather 2 large baking sheets.
- In a large bowl combine the flour, oats, baking soda and salt.
- In another large bowl cream the brown sugar, oil, and vanilla extract. Add the eggs and beat until smooth. Mix with the dry ingredients and churn with a wooden spoon.
- Use a cookie or ice cream scoop place dollops of cookie dough onto the baking sheet, you may need to reform the balls by hand.
- Bake for 10-12 minutes and leave on racks to cool.
