Ingredients :
- 4 centre cut pork chops/8 boneless chops
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup all purpose flour
- 1 tbsp olive oil
- 1/2 cup thinly sliced onion
- 3/4 cup beef broth
- 1 tbsp tarragon
Method :
- Sprinkle pork chops evenly with salt and pepper. Dredge pork in flour. Heat oil in a large skillet over medium high heat. Add half of pork to pan; cook 1 to 2 minutes on each side or until pork is browned. Transfer pork to a plate. Repeat with remaining pork. Reduce heat to medium. Add onion to pan, and cook 3 minutes or until tender.
- Stir in broth, scraping to loosen browned bits. Return pork and any accumulated juices to pan. Bring to a boil; reduce heat, cover, and cook 4 minutes or until pork is done. Stir in tarragon. Yield 4 servings.
