Ingredients :
- 1 lb chicken, cubed
- 7 oz rice noodles
- Peanut oil
- 2/3 cup scallions
- 1/3 cup white onion
- 1/3 cup peanuts
- 1/2 tbsp cornstarch
- 1 tbsp sesame oil
- 3 eggs
- 1/4 cup milk
- 1 dash garlic powder
- Sauce
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- 2 tbsp lime juice
- 2 1/2 tbsp siracha
- 2 tbsp fish sauce
- 2 tbsp brown sugar
Method :
- Beat eggs in a bowl, and add milk. Sprinkle a dash of garlic powder.
- Dice scallions and white onions. Set aside.
- Scramble the eggs in peanut oil. Cook until slightly browned.
- Coat the chicken in sesame oil and corn starch.
- Begin to boil water for the noodles. While doing so mix the sauce using the appropriate ingrediants.
- Grind the peanuts.
- Cook the noodles in boiling water for no more than four minutes. When done, drain and dry noodles.
- Heat a wok with peanut oil. Cook chicken until white, then add scallions, onions, and eggs.
- Once cooked, add noodles with a splash of oil. Add sauce and toss.
- Add peanuts and toss.
