Recipe Chicken Pad Thai

Ingredients :

  • 1 lb chicken, cubed
  • 7 oz rice noodles
  • Peanut oil
  • 2/3 cup scallions
  • 1/3 cup white onion
  • 1/3 cup peanuts
  • 1/2 tbsp cornstarch
  • 1 tbsp sesame oil
  • 3 eggs
  • 1/4 cup milk
  • 1 dash garlic powder
  • Sauce
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 2 tbsp lime juice
  • 2 1/2 tbsp siracha
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar

Method :
  1. Beat eggs in a bowl, and add milk. Sprinkle a dash of garlic powder.
  2. Dice scallions and white onions. Set aside.
  3. Scramble the eggs in peanut oil. Cook until slightly browned.
  4. Coat the chicken in sesame oil and corn starch.
  5. Begin to boil water for the noodles. While doing so mix the sauce using the appropriate ingrediants.
  6. Grind the peanuts.
  7. Cook the noodles in boiling water for no more than four minutes. When done, drain and dry noodles.
  8. Heat a wok with peanut oil. Cook chicken until white, then add scallions, onions, and eggs.
  9. Once cooked, add noodles with a splash of oil. Add sauce and toss.
  10. Add peanuts and toss.
