Recipe Thai Glass Noodle Salad

Ingredients :

  • 1/2 sliced chilli
  • 1 tablespoon garlic/ginger/onion mix
  • 1/2 teaspoon sugar
  • 1 inch tamarind
  • 2 tsp fish sauce / soy sauce
  • 1 teaspoon red curry paste
  • 1 cup water
  • 1 teaspoon sesame oil
  • 100 g glass noodle
  • 2 Spring onions
  • 1/2 onion slices
  • 1/2 bell pepper
  • 1/2 slice chilli
  • 1 bunch coriander leaves
  • 1 bunch mint leaves
  • 1/2 teaspoon sugar
  • 1 handful peanuts
  • 2 limes
  • to taste Salt and pepper

Method :
  1. Soak glass noodles in loads of cold water for about 15-20 mins,
  2. Slice pepper into strips.
  3. Cut sugar snap peas in half lengthwise.
  4. Slice onions, spring onions and chilli
  5. Rough chop herbs.
  6. Heat wok on medium-high fire. When wok is hot, add oil and add in garlic paste. Stir fry a few seconds.
  7. Add in curry paste and stir fry a few seconds before adding tamarind.
  8. Add sliced white onions, chilli, spring onions and peppers. Stir fry a couple of minutes
  9. Add the noodles and stir fry for a minute before water. Let it cook a few more seconds before adding the sugar snap peas. Cook for a minute, stirring regularly.
  10. Season with sugar, fish sauce, nuts and squeeze of lines. Toss. Garnish with herbs, drizzle sesame oil and serve.
