Ingredients :
- 1/2 lb shrimp, no tails
- 11 oz pesto
- 1 jar (15 oz) Alfredo sauce
- 1 zucchini, sliced
- 2 handfuls spinach, hand shredded
- 1 lb angel hair pasta
- 2 tbsp olive oil
- Parmesan cheese (optional)
Method :
- Boil water in large pot. Once at a boil, add pasta and cook until done.
- While getting water to a boil, heat olive oil in separate pot. Add zucchini and cook until almost done.
- Add pesto and Alfredo sauce to zucchini. Stir until combined. Stir in shrimp and spinach. Let sauce cook until heated through and shrimp is pink.
- Drain pasta once cooked. Add pasta back to large pot then add sauce. Mixed until combined.
- Serve hot and add Parmesan, if desired, to top of pasta before serving.
