Ingredients :
- 4 cup cooked long grain rice
- 1/2 cup chopped onion
- 1 tbsp minced garlic
- 3 eggs
- 1 cup frozen mixed vegetables (I use the one with corn, green beans, carrots and lima beans)
- 1 1/2 cup bean sprouts
- 2 tbsp soy sauce
- 1 tbsp sugar
- 3 tbsp butter
- salt and pepper
Method :
- Cool the rice and break up any clumps.
- Heat one tbsp. vegetable oil in a wok and scramble the eggs. Season with salt and pepper. Set aside.
- Add another tbsp. vegetable oil and stir in onions. Cook until translucent.
- Add mixed vegetables and bean sprouts and stir to combine.
- Add the rice and eggs and mix up.
- Add soy sauce, butter and sugar, making sure you mix butter in well.
- Season with salt and pepper.
