
Ingredients :
- 1 onion
- 1 carrot
- 1 courgette
- 1 red bell pepper
- 450 grams cauliflower florets
- 2 cloves garlic
- 1 cm length of peeled ginger
- 80 grams sweetcorn
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 300 mls strong vegetable stock
- salt and freshly ground black pepper
Method :
- Roughly chop the onion, carrot, courgette and red pepper into chunks and put into a food processor with the cauliflower florets, garlic and ginger, pulsing until finely chopped (but not pureed)
- Put the mixture into a saucepan with the cumin and turmeric and stir to coat
- Add the stock and sweetcorn and bring to a simmer. Let cook until the stock has all been sucked up by the cauliflower, around 15 minutes
- Season well with pepper and some salt and serve immediately
