Ingredients :
- 2 Tbsp Korma curry powder
- 150 g Chicken Breast
- 1 clove garlic
- Cube Chicken Stock
- 75 g Brown Rice
- 2 Tbsp Natural Greek Yogurt
- 1 Apple
- 1 onion chopped (not in picture)
- 1 Tbsp Vegetable oil
- 2 tsp corn flour
- 400 ml Cold water
Method :
- Boil the Rice as per the instructions about 25 mins
- Cut the chicken into bite size pieces, chop the garlic, chop the onion, cut the apple into small cubes, slice the banana,
- Heat the oil in a large pan or Wok, add the chicken, garlic onion and apple. Fry for 3 to 4 mins on a high heat.
- Add the stock cube and water. Cook until the liquid reduces, about 5 or 6 mins
- At this stage you can add corn flour to thicken the liquid if required
- Just before you serve the Curry, add the sliced banana and yoghurt and warm through for 1 min.
- Serve with the rice.
