Ingredients :
- 100 grams 00 pasta flour
- 60 grams semolina
- 1 eggs
- 2 egg yolks
Method :
- Place all ingredients in a food processor and pulse until the mixture comes together like damp breadcrumbs.
- If the mixture is too dry to stick together as a dough, add another egg yolk and pulse again
- Tip the mixture onto a flat surface and bring together as a dough.
- Knead for 5-10 minutes until smooth.
- Wrap in clingfilm and leave in fridge until ready to use. At least 30 mins
