Ingredients :
- 1-1 1/2 pounds ground beef
- 1 habanaro pepper, diced
- 1/2 cup yellow onion, diced
- 3 tablespoons butter
- 1 can black beans, drained
- 3 cups shredded cheese
- 4 tomatoes, diced
- 1 cup red onions, diced
- 1 lime
- 1/2 cup cilantro, chopped
- 2 jalepeno peppers, diced
- 6-8 hard shell tacos
- 6-8 flour tortillas
Method :
- Preheat the oven to 350 degrees.
- In a medium bowl, combine the tomatoes, onions, and cilantro. Cut the lime in half and squeeze the juice into the bowl. Stir thoroughly and set aside.
- Heat a large skillet to medium-high and add the butter, yellow onions, and habanero pepper. Cook until the onions are fragrant and translucent.
- Add the black beans to a sauce pan and cook on medium heat stirring occasionally.
- Add the ground beef to the skillet and cook for 10-12 minutes while stirring.
- Lay out the desired number of tortillas on a cooking sheet and sprinkle cheese in the middle. rest the hard shell taco on the cheese and cook in the oven for 5 minutes, or until the cheese is melted.
- Once the black beans are heated, add them to the skillet with the ground beef and stir well.
- Remove the tortillas from the oven and wrap the tortilla around the hard shell taco. Add the ground beef mixture and top with the Pico de Gallo, and more shredded cheese.
