Ingredients :
- 1 cup macaroni
- 3 clove garlic, chopped or sliced thin
- 1 large onion, chopped
- 1 large tomato, chopped
- 1 packages tomato puree
- basil, chopped or dried basil
- 1 tbsp olive oil, extra virgin
- seasonings, salt and pepper
- parmesan cheese
Method :
- Boil Macaroni in enough water, with a pinch of salt. Add some olive oil to the water to prevent the pasta from sticking.
- Cook pasta till al dente. Drain the pasta. Keep aside the pasta water for later use.
- In a pan, add olive oil. Add the chopped garlic and onion. Cook till onion begins to sweat. Add a pinch of salt to speed the cooking.
- When onion begins to appear transparent, add the tomatoes. Cook for a few minutes. Then add the purée. Cook for a minute.
- Add the pasta water and let it boil, for a minute or two.
- Add Macaroni,chopped basil leaves or dried basil (according to availability), seasonings, and grated cheese. Mix well.
- Serve in a large bowl. Sprinkle some more basil if required and a light drizzle of extra virgin olive oil. Enjoy...
