Recipe Tangy Tomato Macaroni

Resep Tangy Tomato Macaroni

Ingredients :

  • 1 cup macaroni
  • 3 clove garlic, chopped or sliced thin
  • 1 large onion, chopped
  • 1 large tomato, chopped
  • 1 packages tomato puree
  • basil, chopped or dried basil
  • 1 tbsp olive oil, extra virgin
  • seasonings, salt and pepper
  • parmesan cheese

Method :
  1. Boil Macaroni in enough water, with a pinch of salt. Add some olive oil to the water to prevent the pasta from sticking.
  2. Cook pasta till al dente. Drain the pasta. Keep aside the pasta water for later use.
  3. In a pan, add olive oil. Add the chopped garlic and onion. Cook till onion begins to sweat. Add a pinch of salt to speed the cooking.
  4. When onion begins to appear transparent, add the tomatoes. Cook for a few minutes. Then add the purée. Cook for a minute.
  5. Add the pasta water and let it boil, for a minute or two.
  6. Add Macaroni,chopped basil leaves or dried basil (according to availability), seasonings, and grated cheese. Mix well.
  7. Serve in a large bowl. Sprinkle some more basil if required and a light drizzle of extra virgin olive oil. Enjoy...
