Ingredients :
- 4 chicken breasts
- 1 chopped onion
- 2 peppers chopped green and red
- 1 can water chestnuts
- 2 cloves garlic crushed
- 1 tablespoon grated Ginger
- 2 tbsp oil
- 1 can pineapple chunks
- 2 tbsp corn flour
- 150 ml water
- 2 tbsp dark soy sauce
- 2 tbsp white wine vinegar
- 2 tbsp soft brown sugar
- 2 tbsp tomato ketchup
- to taste chilli flakes
Method :
- To make sauce, drain pine apple juice add three tablespoons of it to corn flour. Make a paste
- Add rest of juice, water, soy, vinegar, sugar, tomato ketchup, and chilli.
- Chop chicken.
- Add oil to wok stir and fry onions and peppers for five minutes.
- Add chicken.
- After five minutes, add garlic and ginger, pineapple and water chestnuts, and stir fry for one minute.
- Then add sauce to wok, stir well and season with salt & pepper to taste. Simmer till chicken is cooked.
