Ingredients :
- 2 cups pinto beans
- 1 cup long grain rice
- 4-6 cups water
- 1 onion (chopped)
- 1 clove garlic
- to taste salt, pepper
- 1/2 teaspoon cumin
- 1 bay leaf
- 1/2 teaspoon turmeric
- 1 beef builion cube
- 1 cup shredded carrots
Method :
- Add everything to pot except rice then, cook till beans are tender.
- Add rice cook until rice is tender, then season to taste.
- You can make some cornbread to go with.
