Recipe Purple People Eater Soup!!

Ingredients :

• 4 Medium or Large Purple Sweet Potatoes
• 5 Medium or Large Beets
• 1 Medium Onion
• 1 Salt (to taste)
• 1 Black Pepper (to taste)
• 1 Cayenne Pepper (to taste)
• 1 Nutmeg (to taste)
• 1 Water (enough to cover vegetables)
• 1 pints Heavy Cream

Method :

1. Peel and Chop potatoes, beets, and onion
2. Add chopped vegetables into a large pot
3. Add water until just covering vegetables
4. Add salt, black pepper, and cayenne pepper to taste
5. Bring mixture to a boil, then reduce heat to a simmer
6. Cover pot and let cook for 10-15 minutes or until potatoes and beets are tender
7. Bring back to a boil
8. Add heavy cream with nutmeg (to taste) and cook for 2-4 minutes, remembering to stir frequently
9. Turn off heat and let mixture slightly cool
10. In small batches blend mixture until smooth
11. Return blended soup to pot and heat through
12. Soups on!! Dish out your master piece and add whatever toppings you prefer to it.
