Ingredients :
- 2 cups edamame, shelled and cooked
- 1 cup frozen corn
- 1 cup quinoa
- 1/2 red bell pepper
- 2 tablespoons lemon juice
- 2 tablespoons lime juice
- 1/2 bunch cilantro
- 1/2 cup feta
- 2 green onions
- 1 small tomato
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- generous pinch cayenne
Method :
- Toss together and keeps up to 4 days in sealed container
