Ingredients :
- 1 lb. Ground Turkey
- 1 can (28 oz.) corn
- 1 can (28 oz.) no salt added black beans
- 1 can (28 oz.) low sodium diced tomatoes
- 1/4 cup water
- 1 tbs. chili powder
- 1/4 tsp. black pepper
- 1 can (16 oz.) salsa (I used pace medium)
Method :
- Coat pan with cooking spray and cook turkey on medium heat for 8 min. or until browned, stirring to crumble.
- Stir in corn and black beans; cook 2 min.
- Stir in 1/4 cup water then stir in rest of ingredients. Stir until thick.
- Serve with low-fat sharp cheddar cheese and low-fat sour cream or plain greek yogurt tastes the same to me! Serves 6.
