Ingredients :
- 3-4 carrots, chopped
- 2-3 stalks celery, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 red onion
- 1 can (14 oz) diced tomatoes with green chilies
- 1 can (14 oz) diced tomatoes
- 1/2 cup water
- 1 cup bullion (I use vegetable or beef)
- 2 cans (14 oz) black beans, drained
- Cumin, lots!!
- Garlic salt, lots!!
- to taste Salt
- to taste Ground pepper
- 1 tbsp oil
Method :
- Pour oil into large pot, then place all chopped vegetables in and sauté about 5 minutes.
- Add remaining ingredients and boil for 5 minutes.
- Cover and simmer for 15 minutes.
- Uncover for 15 minutes.
- This can also be crockpotted!
