Ingredients :
- 1 cup Pinto Beans (rinsed)
- 1/2 cup Black Beans (rinsed)
- 1 cup Garbanzo Beans (rinsed)
- 1/4 cup Sliced Green Onions
- 1 cup Shredded Carrots
- 1/2 cup Shredded Sharp Cheddar Cheese
- Chopped Basil (garnish)
- 1 head Romaine Lettuce
- 1 cup Cherry Tomatoes (halved)
- For Dressing
- 1 cup Mayonnaise or Greek Yogurt
- 1 cup Milk
- 1 teaspoon Dry Mustard
- 1 teaspoon Cumin
- 1 teaspoon Cayenne Pepper
- 1 tablespoon Onion Powder
- 1/4 teaspoon Pepper
- 1 tablespoon Celery Salt
Method :
- Rinse Carrots, Lettuce, Tomatoes, Green Onions, Pinto Beans, Black Beans, Garbanzo Beans seperately
- Shred the Carrots and the Sharp Cheddar Cheese
- Put all of the ingridients in a large mixing bowl and mix with Salad Tongs or a Wooden Spoon
- Add The Todd Dressing in the salad and garnish with chopped basil
