Ingredients :
- 2 inch thick pork chops
- 1 tbsp red curry powder
- 1 tsp ground coriander
- 1 tsp onion powder
- 1/2 tsp cayenne
- 1/2 tsp dried minced onions
- 1/2 tsp garlic powder
- 1/4 tsp dried thyme
- 1 cup coconut milk
- 1/3 tsp coconut extract
- 1 peanut oil; as needed
- 1 pinch kosher salt and black pepper
Method :
- Whisk coconut extract into coconut milk. Marinate pork for 4-48 hours.
- Pat chops dry. Cover with oil to coat chops. Season.
- Bake at 350° for approximately 25 minutes or until pork reaches desired doneness.
