Ingredients :
- 1 cup rice
- 200 grams minced meat
- 2 medium onions
- 1 large pepper
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 bunch fresh parsley
- 1/2 cup tomato puree
- 2 cups stock or water
- to taste salt and pepper
Method :
- Chop the onions and the pepper and throw in a large pan once the oil is heated. (I use a pan that goes into the oven as the dish is going to bake.) In the meantime preheat the oven to 350°F/ 180°C.
- Once the onions have started to cook add the minced meat. Stir it a few times to make sure it cooks evenly. Add the oregano and pepper.
- Next add the rice.
- Then add the tomato puree or paste and the chopped fresh parsley.
- Lastly add the stock or water and desired amount of salt. Give it a stir and place in the oven for about 20-25 minutes.
- It is done when it gets a nice brown color. You may serve it as a main dish with some salad or yogurt on the side or use it as a side dish. Hope you enjoy!
